Taste Like Chicken??????

BBQ Chip Chicken
THE most easiest chicken you will ever make!
Prepare a cookie sheet by lining it with foil and spraying it with pan spray.
Next, Preheat oven to 375 degrees.
In a food processor, finely crush BBQ flavored potato chips.  (I used about 16 oz for 7 pieces of chicken.)
Place in a bowl.
In another bowl, add about 1/2 cup mayo.
Dip chicken pieces one at a time in mayo then in the chips.  Make sure chicken is coated to your satisfaction!
Place on cookie sheet.  Bake for 25 to 30 minutes or until juices run clear.

Cream Cheese Chicken Pockets
Yield 4
Shredded chicken, about 2 cups
4 Oz cream cheese softened
1 tsp rosemary, thyme (or whatever you like)
2 cups gravy (I made my own from left over juice I kept frozen from cooking a turkey)
1/2 recipe of my Pizza Dough
Make pizza dough according to directions.
Add seasoning to cream cheese then blend in shredded chicken.
Roll out pizza crust and cut into strips.  Divide chicken mixture and place on one half of each strip.  Fold in half.  Seal (I used cornstarch and water - left from making my gravy).
Bake in a preheated 375 oven for about 25 minutes.  To serve - top with gravy.

Fiesta Chicken
10 - 12 pieces cut up chicken, skinned
1 1/2 cups tortilla chip crumbs
1 1/4 teaspoon Lawry's season salt
1/2  cup sour cream or mayo
1/3 butter, melted

Preheat oven 350° F
To get crumbs, pulsate chips in food processer or mini chopper.  Mix in seasoning.
Prepare your pan by lining with foil and spray with pan spray.
Pat chicken dry.  Roll in sour cream or mayo. Roll in seasoned crumbs. Pour about 1/3 cup melted butter over top of chicken.
Bake for 30-45 minutes or until juice runs clear.
